Gammon Casserole recipe

This delicious casserole recipe is perfect for all the family. Because beans are combined into the recipe, you don't need to cook any carbohydrates - just serve with some wilted greens or a large green salad.

Ingredients:

  • 750g gammon joint
  • 2 x 300g tins haricot beans
  • 1 400g tin chopped tomatoes
  • 1 carrot
  • 1 onion
  • 1 celery stick
  • 100g mushrooms
  • 2 cloves garlic
  • 1 tbsp. tomato puree
  • 1 tsp. grainy mustard
  • Black pepper

Method of Preparation:

  1. Finely chop the carrot, celery stick and onion. Slice the mushrooms. Mince the garlic cloves.

  2. Stir together the vegetables, beans, tomatoes, garlic, tomato puree, mustard, and black pepper. Place into the bottom of a casserole dish.

  3. Place the gammon joint into the bean and vegetable mixture.

  4. Cook in a 160C oven for one and a half hours covered with a lid or foil. After an hour and a half, remove the covering and cook for another half an hour.

Serve the beans spooned over the top of the gammon. This recipe serves six people. If you're serving it for dinner, you could prepare it in the pot and simply cover until you're ready to cook it.
