Maple-Lemon Gammon Steaks recipe

These zingy gammon steaks are absolutely perfect for serving for a quick lunch with friends or as an impressive dinner party main course. The spicy salsa accompanying them makes for a tasty dip.

Ingredients:

  • 4 smoked gammon steaks, 150g each
  • Juice of one lemon
  • Juice of one lime
  • 3 tbsp. maple syrup
  • 1 mango
  • 1 red chilli
  • 1 spring onion
  • 1 tbsp. freshly chopped ginger
  • Salt and pepper

Method of Preparation:

  1. Marinate the gammon steaks with the lemon juice, lime juice and maple syrup. Season with salt and pepper and leave for one hour.

  2. Chop the mango into chunks by slicing in half, de-stone and score the flesh in a crossways pattern. Scoop the flesh out of the mango skin.

  3. Finely chop the chilli and the spring onion and mix with the mango along with the ginger and some salt and pepper. Mash together with a fork to release some of the juices.

  4. Cook the gammon for three or four minutes on either side and serve the salsa spooned on top.

You could leave the chilli out of the salsa and use a spoonful of paprika or dried chilli flakes instead. This recipe serves four people.
